Low Fat Banana Nut Muffins!
These are super yummy, we just made some last night and I am eating one right now! haha
Ingredients:
1 1/4 cup flour (to make it even healthier, you could use whole wheat flour!)
1/2 cup brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 Tbsp vegetable oil
1 large egg (beaten)
2 large egg whites (beaten)
3 medium bananas (mashed)
1 cup dry oatmeal
3/4 cup chopped walnuts (I added more, I love walnuts! yum!)
(I added about 2 tbsp skim milk because the batter looked too thick- it probably would have been fine, but they turned out yummy anyway!)
Directions:
Preheat oven to 350 degrees F. Stir together dry ingredients (except the oatmeal and nuts!). Add oil and eggs and mix thoroughly. Add mashed bananas and oatmeal and mix well. Fold in walnuts. Pour batter into 12 muffin tins and bake until the top is golden and firm to touch, 40-45 minutes. Remove and cool on wire rack. (Note: if you try and eat one while it is hot from the oven, it will stick to your paper muffin cups! Found that out the hard way haha )
Number of servings: 12 muffins

Carbohydrates: 31.4g
Calories: 212
Protein: 4.8g
(The amount of cals is high, but it fills you up!)

I will say that they were VERY good and didn't taste like a diet food at all! YUM!
